A Must-Try Cheese: Delice de Bourgogne


With a blog name like Triple Crème Decadence, you know I adore triple crème cheeses.
Triple crème cheeses are the butteriest and most luscious cheeses of them all. Its decadent creamy texture is the result of adding triple the amount of cream at the beginning of the cheesemaking process, boosting the butterfat content to 75%+ in dry matter.
Hailing from the Burgundy region of France is Delice de Bourgogne, one exceptional triple crème! 
Delice de Bourgogne has a subtle earthy flavor with a lingering tang from the addition of crème fraîche.
 The texture is divinely rich with a thin rind that melts in your mouth and a whipped cream-like interior. An ideal pairing to such a decadent cheese is a glass of Champagne. The Champagne bubbles are palate cleansing and the acidity aids in cutting the richness.

A Must-try Cheese: Cypress Grove's Purple Haze


Purple Haze by Cypress Grove is one of those cheeses that you will remember. My first taste of Purple Haze resulted in a little dance, which is an indicator that I am really enjoying what I'm eating. Its flavor is complex--the base is a tangy fresh goat's cheese with the addition of lavender and fennel pollen. Lavender adds a subtle floral note and fennel pollen rounds it all out with its slightly sweet, anise flavors.This is a lovely aromatic cheese that is truly unique. I'd pair Purple Haze with a bright, tart and refreshing glass of  Sauvignon Blanc, its sweet and acidic qualities work beautifully with Purple Haze.

A Must-Try Cheese: Gorgonzola Dolce

Gorgonzola Dolce is a delicious young blue cow's milk cheese from Italy. Unlike other blues, it's aged for two months and has a delicate, supple yet buttery paste that is mild and slightly sweet in flavor. It has a subtle peppery bite and is a lot less pungent than Gorgonzola Piccante and Roquefort. Gorgonzola Dolce is one of those cheeses that you might fall in love with after one bite. I like to serve it as an after dinner cheese with a dessert wine like Moscato. The wine brings out the natural sweetness of the cheese and is a delightful contrast to the light piquancy of Gorgonzola Dolce. Have an awesome weekend!

A Must-Try Cheese: Point Reyes Original Blue

Northern California is home to lush farmlands and happy cows (just like in the commercials). These cows produce quality milk which translates to tasty cheese. Point Reyes Original Blue is the epitome of a great California cheese. It's unsurpassed flavor and quality has earned it major bragging rights. Original Blue won Best Cheese/Dairy Product at the 2011 Fancy Food Show.
It's aged for 5 months and has a delectable creamy texture, buttermilk tang and medium blue flavor. Serve as a savory dessert course drizzled with honey (I love Savannah Bee Company's cheese honey ) and crunchy pecans. Pair it with a divine dessert wine that's sweet and viscous like Sauternes . Its orange blossom notes makes a pleasing pairing that sings with the floral honey while balancing the slight piquancy of Original Blue.

A Must-Try Cheese: Beecher's Flagship

"A Must-Try Cheese" is a new series that I will be introducing to the blog. It's my way of sharing with you my favorite cheeses. This week's cheese is Beecher's Flagship from Seattle, Washington. Let me tell you, it's incredible. If swiss gruyere and cheddar had a baby, it would be named Flagship. It's nutty with a sharp, cheddary finish. True Story-I actually had one of my customers thank me for introducing him to this cheese! It's that good. I simply enjoy it with a baguette and a Matilda.  The malty, butterscotch notes of the beer bring out the natural sweetness of the cheese. Not too light nor too strong, making it a perfect pairing with Beecher's Flagship.
