Cheesy Game Day Guac




With the Super bowl this weekend, I thought I'd share my guacamole recipe. My twist: Cotija cheese. It's a popular Mexican cheese that is sometimes referred to as the "Parmesan of Mexico."  It's full of flavor with sharp and salty notes. You may have seen this cheese sprinkled on your favorite Mexican dish, as it's commonly used as a garnish. I've not only used Cotija as a garnish, but I've fully incorporated. it in my game day guac. The cheese provides a creamy texture and a cheesy, salty flavor.  Serve with tortilla chips and enjoy!





Cheesy Game Day Guacamole

Ingredients:

5 large avocados

1/2 medium red onion, finely diced

1 large jalapeño, finely diced

3/4 cup chopped cilantro 

6 small limes or 4 regular sized limes

2 Roma tomatoes, diced

1/2 pound of Cotija cheese, fresh if possible

1 tsp salt

1 tsp black pepper

Directions:

1. Scoop flesh from avocados and mash to the desired chunkiness.
2. Add the onion, jalapeño and cilantro to the bowl.
3. Squeeze in the juice of 3 limes or 2 if using regular sized limes and mix all the ingredients.
4. Finely crumble the cheese into the mixture. Reserve some of the cheese to use as garnish and mix.
5. Add the last 3 limes or 2 if using regular limes and season with salt and pepper.
6. Add diced tomatoes and mix.

Refrigerate 1 hour before serving.

Helpful tip:

*Instead of purchasing a whole package of Cotija, stop by your local Hispanic foods market and get exactly what you need at the deli counter.
